France,
the proving ground.

Darius Curta left Romania for France at 20. He chose Aix-en-Provence because a friend lived there and because he had learned French in school. The first years were not glamorous. He worked in a 24/7 restaurant and commuted to Marseille, sometimes sleeping in the restaurant to save time and money.

Hospitality became his school. He worked at Le Cintra, Chez Gogou, Les Deux Garçons, and Le Coquet. At Chez Gogou, he stood in a space once frequented by Picasso, Cézanne, and Churchill. The heritage was not lost on him. He learned that craft and service are forms of respect.

The discipline deepened. He woke at 4:00 AM to run before work. He trained with coach Stefan in javelin, and later met boxing coach Erland, who would become a mentor for seven years and bring him to Dubai. By the time he left France in 2016, he had spent nine months in the Apuseni mountains, running trails and preparing for the next room.
